There’s no maple syrup in this pie recipe (not a mistake), but the finished product will remind you of maple-sugar candies thanks to the caramel notes in the brown sugar.


A perennial favourite on our dessert menu, we were honoured that Bon Appétit chose to feature this amazing pie.

Who says you can’t have it all?

You want breathtaking natural beauty? You want the “coolest of the cool” cosmopolitan cities? You want unlimited opportunities for outdoor fun? You want world-class shopping with items you can’t find anywhere else? You want a foodie’s paradise?

Welcome to Vancouver…aptly nicknamed “VanGroovy.”

Vancouver is, quite simply, one of the most beautiful places on Earth with its stunning big mountain panoramas and some of the bluest water you’ve ever laid eyes on. It’s green here year round, even when much of Canada is buried in snow or dried up with summer drought.

And look around, you’ll see that that Vancouverites are as beautiful as their surroundings! They’re a young, hip, laid-back multi-cultural population, where people appear fit and stylish. Greenpeace, the 100-Mile Diet and Botox were created here. It’s easy to see how to stay fit in Vancouver with abundant running, cycling and hiking opportunities.

And it’s easy to see how one can live the “good life” here…with the city’s incredible restaurants of every ethnic variety and fabulous shopping venues. It’s no wonder that Vancouver is routinely named one of the world’s most livable cities.

There’s so much to see and do, but if you have just a few days to enjoy a family vacation, here are some of my family’s favorites.


For our “farewell evening,” we did it up right! We headed to the ever-so-charming Gastown, the historic center of the city. We adored wandering the cobblestone streets and dropping into unique boutiques, trendy coffee shops, first-class restaurants and taking photos with the area’s iconic “Gassy” Steam Clock.

It was tough selecting our final dinner destination among all of the fabulous options, but we made a great choice! Our dinner at the chic, yet cozy Flying Pig was phenomenal!! This “nouveau Canadian Bistro” is super family-friendly and serves up truly gourmet dishes at a great value. You must try the Honey Mussels & Frites, the Lobster and Prawn Risotto, the Crispy Brussels Sprouts, the Maple and Mustard Crusted Port Rack, and the Pan Seared Halibut. And the desserts were spectacular, too!

Summer has left us and we are heading into the fall. The Flying Pig’s calendar is getting full and we want to share some upcoming events with you.

Halloween – Monday October 31. Calling all little ghouls and goblins – head on down to any of our Flying Pig locations or WildTale and show us your amazing costumes. You can be sure we’ll have lots of candy and treats on hand for you.

Umbrella Day Fundraiser – Wed November 9. Continuing our support of the Vancouver Firefighter’s Charities program  ‘Snacks for Kids’ , our Gastown location will be hosting a fundraiser event with lots of great prizes to bid on with a silent auction, entertainment, canapés and some delicious libations for you to sample. The main event will feature a live auction of some amazing packages including amazing trips, getaway weekends and an exclusive Chef’s dinner. Tickets are available in all our locations for $75 with all proceeds from the night going to the ‘Snacks for Kids’ program

Chef Erik’s Homemade Egg Nog & Spiced Rum 150 150 John Crook

Chef Erik’s Homemade Egg Nog & Spiced Rum

WildTale-Egg-NogWildTale and all three locations of The Flying Pig are offering a special drink for the season, Chef Erik’s homemade egg nog with spiced rum. They infuse the dark rum with real vanilla bean, cinnamon stick, clove, and orange peel.


  • 4 cups Milk
  • 5 Clove Pieces
  • 2.5 tsp of Vanilla Extract
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • 16 Egg Yolks
  • 1.5 cup Sugar
  • 2 cup of Half and Half
  • 2 cup Heavy Cream


Combine milk, cream, half and half, nutmeg, cinnamon, cloves, vanilla extract and slowly bring the mixture to a low boil, all on low heat.

In a large bowl whisk the sugar and egg yolks until fluffy. Temper (slowly pour) the hot liquid into the yolk and sugar mixture.

Pour the liquid into a pot and cook on very low heat stirring constantly with a spatula. Cook until desired thickness, do not boil. Strain and cool. Add dark spiced rum and serve.

  • Cinnamon stick
  • Clove
  • Orange peel


Either add contents to rum bottle and take out after five days, or put all ingredients into a container and funnel back into the bottle after five days.

Combine egg nog and rum. Shake it over ice and strain. Serve with a jumbo ice cube, a dash of nutmeg and a cinnamon stick

We have a couple of temporary closures to tell you about in the coming week

The Flying Pig Gastown will be closed early on Sunday Oct 25 (10pm) and reopen for lunch on Wednesday October 28 at 11:30 am. We are doing a little fall cleaning and sprucing up in anticipation of the upcoming holiday season.

The Flying Pig Olympic Village will be closed for a private event on Sunday October 25 at 6pm. We will still be open for Brunch earlier on that day and Happy Hour will be served from 4pm to 5:45pm with the understanding that we need to clear the restaurant for the private event. We apologize in advance for any inconvenience this may cause.

Haida Gwaii Halibut Cheek Provencal 


  • Halibut Cheeks 3-4 pc
  • Extra Virgin Olive Oil 1 fl oz
  • Sliced Leeks 1 fl oz
  • Minced Garlic 1 tsp
  • Minced Shallot 1 tsp
  • Baby Heirloom Tomato 4 pc
  • Pattie Pan Squash 2 pc
  • Chili Flakes pinch
  • Capers 1 tbs
  • White Wine 100 ml
  • Lemon Juice splash
  • Unsalted Butter 50 ml


  1. Heat your pan to medium high heat
  2. Pat your cheeks dry to stop from sticking (dredging in flour optional)
  3. Add oil, halibut cheeks and sear
  4. When there is some color on the cheeks add: sliced leeks, pattie pan squash, tomatoes and garlic, chili flakes and Capers
  5. Deglaze with white wine
  6. Add Butter and lemon juice
  7. Season to taste and serve
