Haida Gwaii Halibut Cheek Provencal
Ingredients:
- Halibut Cheeks 3-4 pc
- Extra Virgin Olive Oil 1 fl oz
- Sliced Leeks 1 fl oz
- Minced Garlic 1 tsp
- Minced Shallot 1 tsp
- Baby Heirloom Tomato 4 pc
- Pattie Pan Squash 2 pc
- Chili Flakes pinch
- Capers 1 tbs
- White Wine 100 ml
- Lemon Juice splash
- Unsalted Butter 50 ml
Procedure:
- Heat your pan to medium high heat
- Pat your cheeks dry to stop from sticking (dredging in flour optional)
- Add oil, halibut cheeks and sear
- When there is some color on the cheeks add: sliced leeks, pattie pan squash, tomatoes and garlic, chili flakes and Capers
- Deglaze with white wine
- Add Butter and lemon juice
- Season to taste and serve
